Chef and Owner Paul Jansen has a firm belief that complexity reduces consistency. With that thought in mind, Sette was created with just seven main dishes. Five quintessential Italian pastas, and two entree specials that change each month. This allows the Sette team to focus maniacally on quality and execution.

About me

Paul Jansen Executive Chef and owner

Hey there, I’m Paul Jansen Executive Chef and owner of Sette and the Paul Jansen Group. I love Italian food! What I don’t love is the multiple pages of most Italian menus which inevitably results in a mediocre food experience.  I studied Italian menus and found that most of the sales comes from a small portion of menu items. Why not put an intense focus on these classic, iconic Italian pastas and execute them to perfection? We feature five iconic pasta dishes that don’t change, and two entrée specials that change each month. This is how Sette was born!

INGREDIENTS:

- 600g of spaghetti
- 250g guanciale
- 6 eggs
- 100g pecorino cheese
- Salt
- Black pepper

RECIPE:

Put the water in a pot and bring it to a boil, then add salt to taste.
Cut the guanciale into strips. Some might say that it is better to cut it into cubes, but the advantage of cutting it into strips is that it will become more crispy and consistent. Brown it in a pan, after having sprinkled with pepper. No oil is needed, the bacon is already fat on its own.
Beat the eggs in a bowl, season with pepper and half the Pecorino cheese (about 50 g), then mix carefully until the mixture is homogeneous and creamy. Remember to add a little bit of the fat of the guanciale during the mixing.
Cook the pasta "al dente", drain it and put it back into the hot pan of the guanciale.
To get the best result you should drain the spaghetti very al dente and add a little bit of cooking water.
Pour the beaten eggs cream into the pan with the pasta and mix it well, until it becomes very creamy.
Pour the contents into the plates, sprinkle with the remaining Pecorino Romano and black pepper.
